Paleo Crepes

Today, I was on a mission to create a Paleo tortilla. That didn’t happen, but what I did make was a Paleo Crepe! It was delicious. After I realized what I had done, I thought I should take the crepe idea and run with it. I grabbed an apple, chopped it up, threw it in a sauce pan with come coconut oil, agave, nutmeg and cinnamon, and viola a Paleo Apple Crepe was created. My tummy is happy. Recipe is below. Enjoy!

Crepe Ingredients:

4 Whole eggs, or 1 c egg whites

1/4 c Coconut oil

Dash of salt

1/2 c Almond flour or coconut flour

1/4 tsp Baking powder

2/3 to 1/2 c Almond milk or coconut milk

Crepe Apple Topper:

1 Apple (chopped)

2 tsp of Agave or honey

Dash of nutmeg and cinammon


With fork froth the eggs. Combine the flour, oil, baking powder, salt. Mix all together until a batter forms. The batter should be a bit “loose”. Heat a pan on medium heat and add coconut oil. Once warm, add batter and allow to cook for 1-2 minutes on each side.

Top with Apples and Enjoy! *This would also be delicious topped with chocolate, berries, nutella, etc…
