Dustin’s Whoopie Pies

My favorite Sesame Street character growing up was the Cookie Monster. Who knew I would grow up and totally fall head over heels for the real Cookie Monster a.k.a. my honey Dustin. 🙂 For Valentine’s Day, I sent my Cookie Monster box of cookies. His favorite of the bunch were these, Coconut Whoopie Pies with Chocolate Sweet Potato Filling. I dedicate this cookie and post to him. Enjoy!

Whoopie Pies

 

Ingredients (Cookie):

1/2 c Coconut oil, melted

4 eggs

1/2 c Unsweetened almond milk

1/2 cup Agave or Honey

1 c Coconut flour

Dash of Salt

Ingredients (Filling)

1 Sweet Potato (Baked and pureed)

1 tsp cocoa powder

1 tsp Honey or Agave

 

Directions:

Preheat oven to 350. Mix dry ingredients together. Slowly add all wet ingredients. Mix thoroughly until dough forms. Roll out dough. Use cookie cutters to cut out circles. Bake cookies for 15 minutes. Remove from oven and allow to cool. While cooling, mix sweet potato, cocoa powder and agave into a thick paste. Spread filling between two cooled cookies and Enjoy!

 

Diana’s Almond Biscotti Cookies

My creatively in the kitchen reaches new highs during birthdays. It’s probably because I don’t want to feel left out. Whatever the reason, I’m glad I know so many people who like receiving Paleo birthday treats! 🙂 This recipe is dedicated to my Zumba Mom, Diana. I hope you enjoy them!

Almond Biscotti Cookies

Ingredients:

2 cups Almond flour

1/4 cup Coconut flour

Dash of Salt

1 tsp of Baking soda

1/4 cup Honey or Agave

1/2 cup  Coconut oil

1 tsp Almond extract

 

Directions:

Preheat the oven to 325. Mix all dry ingredients together. Mix all wet ingredients together. Add wet to dry and mix until ‘dough’ appears crumbly. Form dough into small balls, place on parchment paper. I rolled dough balls flat and used a cookie cutter to make perfect little circles. Bake for 6-9 minutes. They won’t take long to bake. Allow to cool and Enjoy!

 

Linzer Hearts

My love is miles away, but that does mean I can’t keep his tummy happy. I have decided to make that happen the tastiest way possible, with cookies.

Paleo Linzer Heart

Ingredients (Cookie):

1/2 c Coconut oil, melted

4 eggs

1/2 c Unsweetened almond milk

1/2 cup Agave or Honey

1 c Coconut flour

Dash of Salt

Ingredients (Filling):

1 c Sugar free Raspberry jam

or

1 c Pureed fruit jam of choice

Directions:

Preheat oven to 350. Mix dry ingredients together. Slowly add all wet ingredients. Mix thoroughly until dough forms. Roll out dough. Use cookie cutters to cut out heart shape, using thumb make heart shaped dip in center of heart. Bake cookies for 15 minutes. Remove from oven and while warm fill centers with jam. Allow to cool. Enjoy!

Pineapple Cookies

Bought a pineapple. Decided to make cookies out of it. The end. Enjoy!

Pineapples Cookies

Ingredients:

1 3/4 c Almond Flour

¼ cup Coconut Oil

3/4 c Pureed Pineapple

⅛ cup Agave or Honey

1 Egg

Dash of Salt

 

Directions:

Pre-heat oven for 350. Scoop cookies onto parchment paper. I dropped cookies onto parchment paper and shaped into circles with a fork. Cook for 12-15 minutes. Enjoy!

Paleo Thin Mints

Okay, I have become very accustomed to my new diet. I don’t miss ‘normal’ food. However, we have now entered Girl Scout cookie season…yeah. I decided to make myself feel better and ate some! No, I did not buy a box, that would kill me. I made a batch of anna-friendly thin mint cookies. Now, Anna is happy and so will you when you make you’re own. 🙂 Enjoy!

Paleo Thin Mints

Ingredients (Thin Mints Cookie):

1 C Almond Flour

1/4 C Coconut Flour

1 Egg

1/2 tsp Salt

¼ C Coco powder

3 Tbsp Honey or Agave

2 Tsp Peppermint extract

1/8 C Walnut Oil

Ingredients for Coating:

1 C dark chocolate chips (over 60% or Enjoy Life brand)

1 tsp peppermint extract

Directions:

Preheat oven to 350. Take all the ingredients for your cookies and mix them together. Form into a dough. Take dough form in a ball and place on parchment paper. Roll out your dough into a thin flat sheet. Using a cookie cutter (or a small cup) cut out as many cookies as you can. I made about 15 cookies. Place on parchment paper and bake in oven for 10-12 minutes. Allow cookies to cool.

Once cookies have cooled, take chocolate chips and heat them in microwave (30 seconds at a time) until melted. Add oil and extract, mix. Dip cookies into chocolate and place on wax paper. Once all coated, place in refrigerator until chocolate has harden. Remove and Eat up!!!

Paleo Apple Pie

Today is the fourteenth day of the third month, in other words it is 3.14 or National Pi Day! In honor of this day, I decided to make an apple pi. Heheheh….

Image Ingredients (Crust):

2 c Pecans (Ground in a Processor) 

1/2 c Almonds (Ground in a Processor)

1/4 c Walnut Oil

1 Egg

Optional: 1/4 Cup Honey or Agave

Ingredients (Filling):

4 Apples (Peeling, Chopped, then Pureed)

1/2 Lemon Juice

Lemon Peel

Cinnamon

Nutmeg

1/4 Agave or Honey

Directions:

Pre-heat oven 350. Mix all crust ingredients. Once the mixture is thoroughly mixed, scoop into greased pie pan into shape of crust using hands. Now take pureed apples, add in agave, cinnamon, nutmeg and lemon juice. Mix, pour into crust. Top with extra apples. Bake for 30 minutes at 350. 

 

Kimie’s Strawberry Cookies

I must thank Miss Kimie for being the inspiration of these cookies. Have you ever found that you work better under pressure? Well, I do! Hours before Kimie’s Strawberry Party, a vision comes to me, make these strawberries into cookies. And it was done.

Ingredients:

1 ½ cup Almond Flour

¼ cup Coconut Oil

½ cup Pureed Strawberries

⅛ cup Agave or Honey

1 Egg

Dash of Salt

 

Directions:

Pre-heat oven for 350. Scoop cookies onto parchment paper. (I poured batter into cookies cutter to make heart shapes.) Cook for 12-15 minutes. Enjoy!
