Butternut Squash Sausage Curry

If it looks like a duck, swims like a duck, and quacks like a duck, then it must be a duck. Right? Well, this looks like a curry so I’m calling it a curry. It also tastes delicious! Enjoy!

Butternut Squash Sausage Curry

Ingredients:

Sausage of Choice

Green Onions

1 can Coconut Milk ( I used Lite, you can use whatever)

1 1/2 cup Butternut squash

Spices (Cayenne, Salt, Pepper)

 

Directions:

Add coconut oil to pan and saute the onions and sausage until browned. Lower heat and add coconut milk and mashed squash. Add in spices, cover and allow to simmer for 5-10 minutes. Eat and enjoy!

Cauliflower Crust Pizza

The cauliflower is an amazing thing. Serious. I find myself using it almost on the daily. I credit this recipe to pinterest.com . Pinterest, how I love thee… Oh right, the point of this, cauliflower. I was craving some pizza. So once again, my head of cauliflower came to the rescue!

Ingredients (Crust):

1 c Cauliflower (Chopped finely in a processor)

1 egg

Ingredients (Topping):

Zucchini Slices

Bell Pepper

Onion

Goats Milk Chese (Optional)

Spices

Cooked Chicken

Directions:

Pre-heat oven to 350. Take processed cauliflower and egg, mix thoroughly. Feel free to add spices and mix in. Place ‘dough’ on a foil covered cookie sheet. Shape dough with hand or fork into a flat circle about 1/2 inch thick. Bake in oven for 10-12 minutes. Remove from oven, add toppings and broil for a minute or two to crisp the toppings. Enjoy!
